I've done this in the pan and on the grill. Added near the end of grilling, it softens and adds a lot of flavor. Cover cook, tossing occasionally, until lettuce is completely wilted and liquid has evaporated, 10 to 12 minutes. Add garlic, celery, and red-pepper flakes saute until celery is softened and golden, about 5 minutes. I also like it with crumbled bleu cheese on top. Heat oil in a nonstick skillet over medium heat. I tried some plain (very good) then added some spring onion, a few parmesan shavings and some pepper flakes for garnish (also tasty). Delicious, simple, and surprisingly flavorful. Next time, as a variation, I will try grilling the hearts and using crumbled blue cheese.įacing a glut of lettuce from my CSA share and having been curious about grilling, broiling or otherwise cooking lettuce, I have this recipe a shot. I had heart eyes as I stared at the wedge before me, that could really be a meal all in itself, and I thought to myself: Someone really needs to re-invent “the wedge”. Assemble the salads: Prepare the wedge salad lining up three plates. Cook the shrimp: Add the shrimp to the same pan and cook for about 2 minutes on each side, or until the shrimp are pink. It was a hunk of iceberg with the restaurant’s house blue cheese dressing and it was covered (and I mean COVERED) diced tomato and lots of chopped bacon.
